Karen Thompson is a Holistic Health Counselor accredited with the American Association of Drugless Practitioners.  As a graduate of the world renowned Institute for Integrative Nutrition, located in New York City, Karen’s personal mission is to live mindfully in the moment with awareness.  Being open to challenges and ideas that inspire, she welcomes whole food nutrition integrated with creative attainable lifestyle changes for a healthy amazing life.

The desire to listen and interact with adults and children in a caring, understanding and accepting manner resonates with Karen.  While respecting each individual’s journey, Karen encourages and validates adults and children in their quests for achieving life fulfilling goals as well as their unique sources of endless possibilities to reach new horizons.

Karen’s educational history includes the degrees of Bachelor of Science in Education and Master of Education from Bridgewater State College.

Amaranthas began in the spring of 2006 to share the excitement of living with healthy food choices and experiencing supportive wellness approaches with individuals and groups.

Amaranth is an ancient plant with a colorful history that has been reintroduced to North America.  Some species are grown as a vegetable for their spinach-like leaves.  These leaves make a tasty salad.  Other species are cultivated for their tiny gluten free seeds which are valued for their high fiber, protein, calcium, amino acids (lysine and methionine), and iron.  These highly nutritious seeds need to be cooked before eaten.  Amaranth seeds and amaranth flour share versatile uses in breads, cakes, soups, and “grain” dishes.  Also, popped as a snack, sprouted in salads and boiled for a morning cereal are other options.
